Lake Harvest is committed to premium quality. We have a dedicated team that monitors performance on all aspects of our business. They check the cleanliness of all surfaces and personnel before processing is allowed to commence. They remove and check one box of each product type before they leave the factory. The staff also monitors the environment, making sure that there are no significant changes.
We do not just rely on our internal quality assurance: relevant statutory bodies inspect our work every month, thus providing independent confirmation that we are always maintaining the very highest standards.
Our products
Lake Harvest tilapia fillets are given a great deal of individual attention, to make sure that the customers are getting a consistently excellent product. Each fish is hand filleted and individually inspected before packaging. All fillets are free from colorants, preservatives and flavourings. They are low in fat, high in protein and contain Omega-3 oils.
The fillets are available as fresh or frozen. Fresh products are offered as chilled, super chilled or safe chilled, according to our customer’s specific requirements.
Chilled Fillet - XG
The temperature is brought down to between -0.2 and 2.0°C, ensuring that no ice is formed. The chilled product is always packed with a frozen gel pack just in case our customers have any problems with their distribution network.
Super Chilled Fillet – SX
The temperature is brought down to between -1.0 and -0.4°C, providing a much more thermally stable product that is able to take some temperature fluctuations during distribution.
Safe Chilled Fillet – SSX
The temperature is brought down to between -2.0 and -1.0°C, which provides the best defence fresh fillets can have against temperature fluctuations. Frozen gel packs are also included as an additional safety precaution.
Frozen Fillet – FX
For our frozen fillets, we quickly reduce the temperature to -18°C straight off the processing line. The fillets are then individually quick frozen and stored in the cold store at -24°C.
Lake Harvest Tilapia has an exceptional shelf life of up to 16 days for fresh product and 2 years for frozen product.
Our trims are completely free from bones, including ‘pin bones’. All fat is removed and the fillet is neatened of any ragged cuts. There are two grades of trim that customers can choose from:
Super-trim
The ST fillet is fully trimmed in the belly area and is left completely free from skin.
Minimum-trim
The MT fillet is not as fully trimmed in the belly area, with a little of the light skin left there.
