Ingredients
2 Fish Fillets Skin On
1 Tbsp Fish Spice
½ tsp salt
½ tsp black pepper
1 sprig fresh thyme
1 sprig fresh rosemary
For The Avocado Sauce
Half and avocado
200ml plain yoghurt
50ml Milk
1 Tbsp fresh Coriander
1 Tsp Honey
1 tsp Chilli Flakes (optional)
Method
Grind all ingredients for the avocado sauce in a blender. Set aside.
Sprinkle fish spice, salt and pepper on tilapia fillet, skin down.
Heat oil in a pan, add thyme and rosemary and gently fry till fragrant.
Add tilapia fillets, skin down into the pan and gently fry for 3 – 4 minutes, turn the fish and fry for a further 3 – 4 minutes.
Spoon avocado sauce on a plate and place fried tilapia fillets on there. Alternatively you can serve the sauce on the side in a small ramekin.
Garnish with quartered cherry tomatoes and sprinkle chilli flakes over fried fish.
Serve immediately.
