Ingredients
500g LAKE HARVEST tilapia fillets cut into chunks
Salt and pepper for seasoning
Flour for dusting
¼ cup vegetable oil
1 cup dessicated coconut
1 tsp coriander powder
½ tsp cumin powder
¼ tsp tumeric powder
½ tsp peri peri powder
1 tsp paprika powder
4 garlic cloves
1 piece ginger
2 cups warm water
1 onion chopped
1 tomato grated
Method
Heat oil in a pan on medium heat.
Season tilapia with salt and pepper.
Toss tilapia in flour and fry in oil until sealed.
In a blender grind coconut and spices with garlic and ginger with 2 cups warm water. Sieve and set aside.
Heat 2 tbsp oil in a pot, add onion and fry until translucent. Add sieved coconut juice and grated tomato and gently simmer for 10 minutes.
Add fried fish and cook for a further 5 minutes. Season with salt if necessary. Serve hot with rice.
