Ingredients
1 Dried Lake Harvest Tilapia
2 Tbsp Oil
2 Onions chopped
1 tsp crushed garlic
2 Tsp Crushed Ginger
1 cup Tomato Puree
3 Tomatoes Chopped
1 Tbsp Peanut Butter
1 Cube Chicken Stock
Method
Soak dried tilapia in hot water for about 20 minutes. After 20 minutes drain water and remove the scales using a sharp knife. Cut the fish into pieces and set aside.
Heat oil in a pan, add chopped onions. Saute for a few minutes.
Add tomato puree and fry for 2 minutes. To this add your freshly chopped tomatoes and allow to simmer until liquid has evaporated.
Add peanut butter, cut tilapia and toss in tomatoes until all the fish is coated. Prepare your 1L chicken stock by dissolving 2 chicken stock cubes in a litre of hot water. Add this to the fish, season with salt and pepper, cover and simmer for a further 20 minutes.
Serve your Dried Fish Stew with sadza or rice.
