Ingredients
2 Fish Fillets
For The Mayo Sauce
¼ Cup Mayo
¼ cucumber, chopped
1 Tbsp Chopped Parsley, finely chopped
I tomato, diced
2 Gherkins, diced (Optional)
Juice from ¼ lemon
¼ tsp black pepper
For The Coating
1 Cup Plain Flour
1 tsp Paprika powder
1 tsp Peri Peri powder
1 tsp Onion Powder
1 tsp Garlic Powder
Salt and Pepper for seasoning
1 Cup Cornflakes Crushed
1 Tbsp Mixed Herb
1 egg, beaten
2 Burger Buns
Method:
For The Mayo Sauce
Mix all ingredients together and set aside.
To Crumb The Fish
Mix all coating together in a large bowl, dust fish fillets on both sides and set aside.
In another bowl, mix cornflakes, mixed herbs and more seasoning if required.
Dip coated fish in beaten egg, then cornflake mix and shallow fry for 3 minutes on each side.
Drain on absorbent paper.
To Assemble
Cut burger buns in half and toast in a pan until golden brown.
Sprinkle shredded lettuce, crumbed fish, mayo sauce and top with remaining toasted half bun
Serve immediately
