Ingredients
500g Tilapia fillets
1 cup milk
3 cloves garlic
Salt & Pepper to taste
2 potatoes – boiled and mashed
1 TBSP chopped parsley
2 eggs, beaten
breadrumbs
500ml cooking oil
Method
Combine all spices to make the cajun
Add Tilapia, milk, garlic to a pot and season with salt and pepper
Simmer for 10 minutes or until fish is cooked.
Allow to cool.
Drain fish, then flake it, add mashed potatoes, chopped parsley and more seasoning if required.
Combine all ingredients well.
Form balls and flatten slightly, dip in beaten egg and then breadcrumbs.
Repeat process until mixture is finished.
Refrigerate for 30 minutes
Heat pan, add 2 cups of vegetable cooking oil.
Fry fishcakes in batches until golden.
Drain on absorbent paper and serve with a sauce of your choice.
