Ingredients:
For The Sauce
½ tsp grated garlic
1 tsp Black Bean Sauce
1 tsp Soy Sauce
1 Tsp Chilli Sauce
1 tsp Sesame Oil
1 tbsp Oil
For The Soup
2 tbsp vegetable oil
2 Lake Harvest Tilapia Fish Head
Salt & Pepper for seasoning
1 onion chopped
2 Carrots sliced
2 Tablespoon Coriander Stems Finely Chopped
2 Tsp Crushed Garlic And Ginger
1 fresh whole green chilli, slit in half
Half Head Broccoli Sliced
1 ½ Cups Water
1 packet 2 Minute Noodles ( Cooked )
1 Boiled Egg
Handful Coriander
Method
To make the sauce, mix all the ingredients together, stir well and set aside.
In a pot heat vegetable oil. Season fish heads with salt and pepper before adding to the heated oil. Fry fish heads for a few minutes.
Add chopped onions and sliced carrot and saute. Add the chopped coriander, garlic and ginger paste and lightly fry, then your slit green chilli. Add enough water to cover the fish heads, and a sachet of noodle flavouring. Combine the sliced broccoli to the soup and season with salt and pepper Bring to a boil then reduce to a simmer for 25 minutes.
Cook 2 minute noodles as per instructions and boil 1 egg, which you then cut in half.
Lay the cooked noodles in a bowl, add the halved boiled eggs. Top with fish heads and ladel soup over this.
End off by drizzling the sauce over the soup.
Garnish with sprigs of fresh coriander.
