Ingredients
1 Medium Sized Bream (Whole Gutted)
1 Kg Coarse Salt
100g Fine Salt
2 Tbsp Fennel Frongs, Chopped
1 Egg White
1 tbsp water
Bunch Fennel
1 Orange, sliced
I Lemon, sliced
Method
Pre heat oven to 180 degrees celcius.
Prepare salt – mix the two salts and add some chopped fennel frongs
Add egg white and mix until sand like texture is achieved .
Lay half of the salt mixture on a baking tray.
Lay whole bream on salt mixture and fill cavity of fish with fennel, orange and lemon slices.
Cover the whole fish with the remaining salt mix and pat it firmly over the whole fish so it acts as a crust.
Bake in a preheated oven for about 20 – 25 mins .
Crack open and enjoy.
